Cooking without fat completely may not be possible, but you can take some good steps toward reducing this fat in your diet if you make a few simple alterations in your menu planning and preparation. Besides choosing recipes that are low-fat to begin with, you can also substitute items that are not as high in fat to lessen the amount you are eating on a daily basis. For example, you can use 2% milk or skim in many recipes instead of whole milk. Another great substitution is to simply stop cooking with butter and use just a pinch of olive oil instead to cook foods.

For baked goods there are also some great strategies you can use. Some recipes won’t be any worse for the taste buds if you reduce the amount of butter and replace it with applesauce instead. This can also work for shortening and oil. Reduce fat in “assembled” foods such as salads by simply eliminating items that have a high fat content, such as cheese and olives. Try replacing them with healthy vegetables like broccoli and carrots instead.
